I am looking for any links that people may have to either personal recollections, diaries or other pieces of information about life in a WW1 British sub through the eyes of either an officer or a hand. Anything that can give me a glimpse of life onboard would be most appreciated.

For the sake of getting a start on the subject, here is a start, you can buy this book on-line from the Royal Navy Submarine Museum. It has some good info on what you want.

It is very easy to access material written by officers but if you are serious and prepared to do some work, I would refer you to the former Liddle collection housed in Leeds University where you will find some little known letters, recollections and musings of submarine ratings

i'm aware of some items Leeds have, but do they have much on the Batic submariners in the way of letters and so on?
